昨年 SAKE DIPLOMA に合格し、今年は英語版の SAKE DIPLOMA INTERNATIONAL を受けようかと検討中です。
なかなか日本酒に関係する英単語がわからないので、Youtube でそれらしい動画を探して勉強しようという企画です。
Youtube の字幕は同時に日英両方を表示できないため、いまひとつ勉強がはかどらない……。
ということで、日英を一文ずつまとめてみました。

Welcome to Dassai Bar 23, in Kyobashi , Tokyo 東京の京橋にある獺祭bar 23へようこそ It's a place you can get a glass of the world famous Dassai 23 ここでは世界的に有名な獺祭23を提供しています。 Japanese Sake has gained popularity worldwide, 世界での日本酒の知名度は上がりましたが and Dassai is the brand most sought 中でも獺祭ブランドは需要がとても高く、 after with its fine polish ratio and smooth sophisticated taste. その洗練された味と磨き2割3分が有名です。 But how do we get to this refined finished product? しかし洗練された日本酒にたどり着くにはどうしたらいいのか。 I traveled to their brewery in Yamaguchi Prefecture 山口県にある彼らの酒造所を訪ねました an hour from Hiroshima, nestled deep in the country side. 広島から1時間。郊外奥地にそれはあります Showing me around the brewery is Dassai CEO, Sakura-san, 案内してくれたのは獺祭CEOの桜井さんです。 He shared his knowledge and passion for making Sake with me. 日本酒を造る知識と情熱を渡しに教えてくれました。 From Rice to Bottle. 米から瓶になるまで。 But before we begin the tour, ツアーを始める前に、 It's good to learn a little about the rice. 米について知っておきましょう。 I joined Dassai's rice planting ceremonial event in June. 6月に獺祭の田植えの式典に参加しました。 Yamadanishiki is the variety of rice, most widely used to make SAKE. 日本酒を作るのに最も有名な品種は山田錦です。 It's grown deep in Hyogo Prefecture. where the conditions are ideal. 理想的な環境の整った兵庫県の奥地で作られます。 Rice planting by hand is back breaking work. 手での田植えはまさに骨の折れる作業です。 Historically, nearly every family had their rice paddy. 歴史を振り返ればほとんどの家族が何かしらの田んぼか畑を持っていました Nowadays, nearly everybody gets their rice at the store. 今ではほとんどの人は米は店で買うものになりました。 But this tradition has deep roots. この田植えの伝統は長い歴史を誇っています。 These days though, farmers use a rice planting machine. 現代では農家の方は田植えの機械を使います。 All rice used in SAKE is polished. 日本酒で使われる米はすべて磨かれます。 Polishing the rice removes the impurities, 磨くことで不純物を取り払われ giving it a smoother taste. 口当たりがよくなります。 Here is a natural grain of rice. こちらは玄米です and Dassai 23, polished down to 23 % そして2割3分まで磨かれた獺祭23です。 Dassai polishes down to 3 sizes. 獺祭では三種類に磨かれます。 50 39 and 23. 50, 39, そして23です。 All Nihonshu brewed with rice polished under 50% 50以下に磨かれた米で作られた日本酒は is called JUNMAI DAI- GINJO 純米大吟醸と言います。 The highest quality. 最高級品です。 and Dassai only makes JUNMAI DAI GINJO sake. そして獺祭は純米大吟醸しか作りません So now let's make some. それでは作ってみましょう。 This is the first room the rice travels to in the brewery. 醸造所で米が最初にやってくる部屋がここです。 The polished rice is taken here to be washed, rinced and soaked. 磨かれた米はまずはここに運ばれて洗い、すすぎ、そして水に漬けられます Sakurai-san explains that the process is strictly timed. 桜井さんは工程は厳しく時間で管理されていると説明します Staff work in unison as a team. スタッフはチームとして同時に行動します After HOREI, air drying the steamed rice, 空気で乾燥させる放冷で蒸した米を冷ました後に Most of it is sent through this tube to the upper floor. ほとんどの米はこのパイプを通して上階に送られます and loaded into a fermentation tank with water, yeast and Kouji そして醗酵タンクの中で水、麹、酵母と混ぜられます This is the yeast starter called SHUBO こちらは酵母が培養されている酒母です。 The basic mixture that will increase over the next 4 days, as the yeast multiplies. 酵母がこれから数日かけて倍増していく為の原液となります。 But before we get into the fermentation room, we should learn about an earlier step. 醗酵室に入る前の段階について学びましょう。 The most critical part about brewing SAKE 酒の醸造で最も重要な工程です This is where Dassai makes Kouji ここで獺祭は麹を作ります Kouji is steam rice inoculated with Kouji mold spore. 麹とは麹菌が繁殖した米のことです。 Steamed rice is separated and laid flat on sheets in a very hot and humid room with dead air. 蒸した米は風の無い暑くて湿気のある部屋に個別に並べられます。 About 20% of the total steamed rice makes its way here. 蒸した米の2割くらいがここに運ばれてきます The rest into the fermentation tank. 残りは醗酵タンクに入れられます If you're wondering how this rice tastes before becoming Koji, この米が麹になる前の味を知りたいですか? Here's your answer. 答えはこれです。 No taste. Yes, no taste. 味が無い。 This is the Tsukihaze Kouji-kin mold spores こちらが突破精(つきはぜ)麹菌です Practice run. 練習中です。 The spores must be spread evenly with great precision. 麹菌は均等に、そして正確に与えられなけばなりません。 Hold your breath and try not to move! 息をのんで見守っていましょう。 We're about to get started. 開始です。 The staff here have a very specific way to apply the mold. スタッフは特殊な方法で麹菌を散布します。 They move in unison so the spores spread evenly on the rice. 一緒に動くことで米に均等に麹菌が行き渡ります The air is completely dead. 風一つありません。 As you see, the air vents are covered to prevent contamination. 通気口が塞がれていることで汚染されるのを防ぎます Simply put, Koji is the secret ingredient to make SAKE 簡単に言えば麹は日本酒造りの秘薬です mixed in the tank to make sugar, with the help of yeast, タンクに混ぜることで酵母の力を借りて糖を生成します。 which over time creates alcohol and CO2 時間が経つとアルコールと二酸化炭素を生み出します。 Kouji is made once daily at the Dassai brewery. 麹は獺祭醸造所で毎日作られています You can see the polished rice ball surrounded by mold. 磨かれた米が菌で覆われているのが見えるはずです It's actually growing inside the rice. 実際は米の中で育っているのです It has a sweet chestnut aroma to it. 心地よい栗のような香りがします To grow strong, Koji needs a warm environment. 強く培養するには麹には暖かい環境が必要です I'm sweating. 汗が止まらない How does it taste now, as Koji? 麹となった今、味はどうでしょうか Only one way to find out 食べてみるしかありません Now we can go back to the fermentation room それでは醗酵タンクへ Dassai has a lot of NIHON-SHU in here. 獺祭はここに幾つもの日本酒を醸造しています You can't rush making SAKE 日本酒造りに焦りは禁物 It just takes time to make magic happen 魔法が起きるには時間が必要です This tank is early in the fermentation process このタンクは醗酵の初期段階です You can see the mash, or MOROMI caked on top もろみが表面に見えます Everything happens in this one tank over 35 days. 醗酵がこのタンクの中で35日間かけて行われます Give it some time! まだ時間がかかるね。 The unique process to make SAKE in one tank is called, multiple parallel fermentation 一つのタンクで様々な醗酵を行う方法を並行複醗酵といいます This tank is really bubbling. producing a lot of gas. このタンクはとても泡立っており、ガスが出ています It nearly has the SAKE aroma and flavor. 日本酒の香りと味がしてきます and the fermentation stage is almost over. 醗酵工程ももうすぐ終了です Wow. Really fruity. It's alive. 活きてる It's really complex tasting. 混ざった味。 It's fruity, spicy, it's bubbling.. フルーティーだし、辛味もあるし、泡立っているし It's alive! 活きてる Let's head down to the press. 圧搾部屋へ When the MOROMI is ready, it's sent here to be pressed. もろみが準備完了になるとここで圧搾されます This is an automatic MOROMI press こちらは自動もろみ圧搾機です It uses compressed air to very gently press out a tank of MOROMI to produce SAKE 圧縮空気で慎重にもろみを圧搾し日本酒になります The SAKE produced here is filtered but unpasteurized ここで作られた日本酒は濾過されますが殺菌されません Presses are great for volume, 圧搾は大量の日本酒を作るのには適していますが but SAKURAI-san explains DASSAI has another original way to extract SAKE. 桜井さんによれば獺祭には日本酒を搾りだす特殊な方法があるようです centrifuge! After pressing, there is filtering. 圧搾の後には濾過があります Aging, pasteurization. 熟成があり、殺菌がされます And finally, the bottling. 最後は瓶詰されます The bottles are also pasteurized here 瓶はここで殺菌されます The bottles are heated at a temperature of 65 celcius 瓶は摂氏65度で殺菌されます Bacteria is killed at a temperature over 60 degrees. 雑菌は60度以上で死滅します Then it goes through the bottling course to cool off. 瓶詰工程で冷却されます until it's 20 degrees Celsius. 最終的には20度に冷やされます Then it gets labeled and packaged for shipping. ラベル付されて包装されます These Dassai 39 bottles are ready for the world. これらの獺祭39は世界に向けて送られます This is a prized Junmai Daiginjo bottle of Sake for sure. これは特別な純米大吟醸の瓶です There is only one step left 最後のステップだけです So we've been to the brewery and back. 醸造所にいって、戻ってきました Filled with an amazing amount of appreciation for the process to make SAKE. 日本酒を作る大変な工程に感謝の気持ちをもって It's more than just SAKE 単なる酒ではありません。 It's NIHON-SHU, Japanese national drink 日本酒です。日本の国酒です It's perfect. 完璧です。 Sip with food, or on it's own 食べ物と飲んでも、そのままでも。 It's a date with nature. Loaded with a good night kiss まるで自然とのデート、お別れのキス付です。
